Drug busts are a good place to find them, or tire irons from out the back of cars. You need either your own melee weapon, or disarm an enemy. The section at the end of "Night Market Chase" gives you a good few to work with just reload the checkpoint when you've used them all. I've listed every one I could find in the text guide.

Chu's Revenge is a very useful mission since it features unarmed enemies, enemies armed with melee weapons, enemies armed with guns, and a driving sequence. Fortunately, they are all cumulative, so you can simply reload a checkpoint once you've completed a certain action. I've listed the most appropriate and quickest way to earn each stat award below, as well as its requirements for bronze, silver and gold in brackets. Some however will require you to grind a few activities out, usually by replaying a specific mission. You will probably unlock several of them to a gold level just via basic progression. I'd suggest not attempting to get the above achievements until you've completed every other aspect of the game.
